Egg bites are a favorite easy breakfast among pressure cooker fans. Instant Pot egg bites are reminiscent of the popular Starbucks sous-vide egg bites and can be modified endlessly with different meat, cheese, and vegetable combinations, many of them keto-friendly! You can make keto Instant Pot egg bites with varying combinations of ham, bacon, sausage, Cheddar cheese, pepper jack cheese, onion, bell pepper, spinach, tomatoes, and more. Egg bites are also great for meal prepping, as you can make up to 14 at a time and store them in the refrigerator for a few days. Today I’m sharing a recipe for delicious Bacon and Gruyere Instant Pot Egg Bites. Note: This recipe uses cottage cheese for some added creaminess. If you’re not a fan cottage cheese, you can make these Instant Pot egg bites without cottage cheese by substituting heavy cream in the same quantity.

This Instant Pot egg bites recipe can be modified in a number of different ways with different meat, cheese, and vegetable combinations (think ham, bacon, sausage, Cheddar cheese, pepper jack cheese, onion, bell pepper, spinach, tomatoes, and more). If you stick with low-carb ingredients, you can even make keto Instant Pot egg bites numerous ways with this same recipe method.

To make Instant Pot Starbucks egg bites, start by pouring 1 cup of water into the bottom of your Instant Pot’s inner pot and placing a steamer rack trivet in the bottom (if you are using a bakeware sling you won’t need to use the trivet). Spray the cups of a silicone egg mold with nonstick cooking spray.

Cooking Tip: If you have two silicone egg bite molds you can double this Instant Pot egg bites recipe and cook them at the same time by laying a piece of foil between the two molds (do not wrap the bottom mold with foil, just place the foil between the two to prevent excess water from the top mold dripping into the cups of the bottom mold) and carefully stacking them on top of each other. The cooking time will remain the same.

In a medium bowl or large liquid measuring cup whisk the eggs. Stir in the chopped cooked bacon, shredded Gruyere cheese, cottage cheese, chopped parsley, salt, pepper, and garlic powder until well mixed.

Ingredient Tip: If you’re not a fan of the texture of cottage cheese, you can substitute it for heavy cream at the same quantity (1/4 cup) to make these Instant Pot egg bites without cottage cheese.

Divide the egg mixture evenly between the seven egg bite mold cups. Place the egg bite mold on top of the trivet, uncovered (or on your bakeware sling and lower it into the pressure cooker pot).

Close and lock the pressure cooker lid, make sure the pressure/steam release switch is set to sealing, and set the cooking time to 11 minutes at high/normal pressure. It will take 7 to 8 minutes for the pot to come to pressure before the cooking time begins.

After the pressure cooking time ends allow the pressure to release from the pot naturally for 5 minutes before releasing the remaining pressure using your manufacturer’s quick release method.

Remove the Instant Pot egg bites from the pressure cooker and cool on a wire rack before using a spoon or butter knife to remove the keto Instant Pot egg bites from the mold.
